Spicy Italian Crescent Ring

Ingredients

2cans (8 oz each) Pillsbury™ refrigerated crescent dinner rolls
1/2cup well drained roasted red bell peppers (from a jar)
8slices provolone cheese, halved
1/3lb deli sliced hot salami
1/4lb deli sliced ham
1/4lb deli sliced capocollo
1/2cup well drained hot pepper rings (from a jar)

Loaded Baked Potato Rounds

Start out with a handful of baby red potatoes. They are the perfect size for these rounds and I just happen to be madly in love with baby reds.

I tried slicing the potatoes with my mandolin and it was a disaster. My sharp and trusty chef's knife was a much better option. Slice the potatoes so they are no more than 1/4 inch thick. Place them on a rimmed, parchment-lined baking sheet and brush them with olive oil. Sprinkle some kosher salt over the tops.

Ingredients

• 1 (15.25 oz) package chocolate cake mix, prepared according to package instructions
• 1 (14 oz) can Eagle Brand Caramel Flavored Sweetened Condensed Milk
• 1 (16 oz) can store bought chocolate frosting
• 1 cup chopped pecans
• 1/2 cup mini chocolate chips
• Store bought caramel syrup for drizzling on top of cake
• Note: If you can't find the seasonal flavor of the Eagle Brand Sweetened Condensed Milk, you can substitute 1 cup of caramel flavored syrup, (found in the ice cream section of your grocer). If it's too thick to pour, heat in microwave according to package instructions before pouring over cake.

Parmesan Crusted Tortellini Bites

Ingredients

• 1 (9 oz.) package refrigerated three cheese tortellini
• 1 cup oil (varies slightly depending on pan size)
• ½ cup all-purpose flour
• 2 large eggs, beaten
• 1 cup Panko Breadcrumbs
• ¼ cup freshly grated Parmesan
• 2 Teaspoons of Parsley, chopped well
• ¼ teaspoon of red pepper flakes (optional)
• ½ cup marinara sauce

I kind of overdid it on the sweets over the holidays, I’m sure some of you can relate, and I was all ready to buckle down and get my low carb on when Melinda said, “But…cheeseburger tots…” at which point I decided one more day wouldn’t hurt and we baked up a batch of these tasty Cheeseburger Tots.
